Banana Sundae Cookies Recipe
Healthy Cookie Recipe
Ingredients:
1 cup (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
1-1/2 cups mashed ripe bananas (about four medium bananas)
2 eggs or 4 egg white or egg substitute equivalent to two eggs
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt (optional)
2-1/2 cups quick or old fashioned oats, uncooked
1-cup (6 ounces) semisweet chocolate chips
Frozen yogurt or ice cream
Ice cream topping, flavor of choice
Directions:
Heat oven to 350 degrees. Beat margarine and sugar until creamy. Add bananas, eggs and vanilla, beat well. Add combined flour, baking soda and salt; mix well. Stir in oats and chocolate chips; mix well. Drop by 1/4 cupfuls onto ungreased cookie sheets about three inches apart. Spread dough to 3-1/2-inch diameter.
Bake 14 to 16 minutes or until edges are light golden brown. Cool one minute on cookie sheets, remove to wire rack. Cool completely.
To serve, top each cookie with a scoop of frozen yogurt or ice cream and ice cream topping. Recipes makes about two dozen Banana Sundae Cookies.
