Dessert Trimming Tip 1: Love chocolate ice cream - but not on your hips? Replace 1 cup of chocolate ice cream with 2/3 cup of nonfat chocolate frozen yogurt.

Dessert Trimming Tip 2: For chocolate desserts, use 3 tablespoons of cocoa, instead of 1 ounce of baking chocolate. If fat is needed to replace that in chocolate, add 1 tablespoon or less of vegetable oil.

Dessert Trimming Tip 3: Instead of full-fat ice cream or whipped cream, top a slice of pound cake with lowfat, vanilla or French vanilla yogurt. Or, serve cake, pies or fruit with a scoop of frozen lowfat yogurt.

Make a graham cracker crust without extra calories: Combine 2 tablespoons of unsweetened applesauce, 1 tablespoon of sugar and the regular amount of low-fat graham cracker crumbs, then press the mixture into a pie plate.

Dessert Decorating & Baking Tips

  • Add a finishing touch to desserts by garnishing with an ingredient used in the recipe, such as lemon slices on a lemon pie, peanuts on a peanut butter pie or chocolate curls on a chocolate pie or cake.
  • When cooking any kind of strawberry dessert, add a splash of aged Balsamic vinegar to the recipe to enhance the flavor of the strawberries.
  • If dough sticks to your rolling pin, place it in the freezer for a few minutes.
  • Try using milk instead of water when making pie crusts to make a more tender crust and to have it brown nicely.
  • Coat a knife with cooking spray before slicing a pie so sticky fillings won't cling to the blade.
  • Fromage blanc is a nice substitute for whipped cream or sour cream. This soft, slightly tart white cheese comes in a cream cheese-type container. Whipped, it becomes a light dessert topping.
