Healthier Dessert Recipe

Bread pudding is a simple baked dessert made with cubes or slices of bread saturated with a mixture of milk, eggs, sugar, vanilla and spices. Chopped fruit or nuts also can be added. Using whole grain bread ups the nutritional ante, while the use of 2 percent milk keeps the fat content DOWN!

Ingredients:
3 cups 2-percent milk or other milk alternative if desired (such as soy, or lactose free)
5 tablespoons cornstarch
1/2 cup maple syrup
6 slices whole grain bread, chopped into 1-inch cubes
1 teaspoon vanilla
1/4 teaspoon cinnamon

 

Directions:
Place the milk, cornstarch, and syrup in a medium-size pot.

Mix with a whisk for one minute.

Add the whole grain bread, vanilla and cinnamon and heat over medium-high heat until pudding starts to thicken.

Remove from stove and pour into 6 dessert bowls or one 9 x 9 x 2-inch pan.

Place in the refrigerator and chill for at least one hour before serving.

Makes 6 servings Bread Pudding.
