1/4 cup dried cherries or dried cranberries
2 tablespoons orange juice
1 16-ounce loaf French bread
3 12-ounce cans evaporated skimmed milk
4 egg whites
1/2 cup sugar
1/2 teaspoon chocolate extract
1/2 teaspoon rum extract
1 teaspoon vanilla extract
1/2 cup semisweet chocolate pieces
Preheat the oven to 350 degrees. Coat a 9-by-13-inch pan with nonstick cooking spray and set aside. Combine the cherries and the orange juice in a small microwave-proof bowl. Heat for 1 minute and let stand until the cherries absorb the liquid. Cut the bread into 1-inch cubes.
In a large bowl, whisk the milk, eggs, egg whites, sugar and chocolate, rum and vanilla extracts. Add the soaked cherries and cubed bread, mix well and let stand for 10 minutes. Spoon the mixture into the prepared pan and sprinkle the top with the chocolate chips. Bake for 35 to 40 minutes, or until a knife inserted in the middle comes out clean. Remove from the oven and allow to stand for 10 minutes before cutting.

Variation: Quick Chocolate Cherry Bread Pudding
5 large eggs
3 cups low fat chocolate milk
1 tablespoon almond extract
1 loaf (about 10 ounce) stale Italian or French bread cut into 1-inch cubes (about 7 cups)
1 cup dried cherries
Preheat oven to 325-degrees. Butter or lightly spray with nonstick vegetable cooking spray a 13 x 9 x 2-inch baking dish. In a large bowl, whisk together the eggs until combined. Whisk in the chocolate milk and almond extract until blended.
Add the bread cubes and toss to moisten the cubes with the mixture. Gently stir in the cherries. Scrape the mixture into the prepared dish. Bake for 45 to 50 minutes or until the mixture is set. Serve warm. Cover and refrigerate any leftovers. Reheat to serve. Recipe makes ten servings.
