Chocolate Cherry Bread Pudding Recipe
Healthier Dessert Recipe
Ingredients:
1/4 cup dried cherries or dried cranberries
2 tablespoons orange juice
1 (16-ounce) loaf of French bread (any dense bread can be substituted)
3 cans (12 ounces each) evaporated skimmed milk
2 eggs
4 egg whites
1/2 cup sugar
1/2 teaspoon chocolate extract
1/2 teaspoon rum extract
1 teaspoon vanilla extract
1/2 cup semisweet chocolate pieces
Directions:
Preheat the oven to 350 degrees. Coat a 9-by-13-inch pan with nonstick cooking spray and set aside.
Combine the cherries and the orange juice in a small microwave-proof bowl. Heat for 1 minute and let stand until the cherries absorb the liquid.
Cut the bread into 1-inch cubes.
In a large bowl, whisk the milk, eggs, egg whites, sugar and chocolate, rum and vanilla extracts. Add the soaked cherries and cubed bread, mix well and let stand for 10 minutes. Spoon the mixture into the prepared pan and sprinkle the top with the chocolate chips. Bake for 35 to 40 minutes, or until a knife inserted in the middle comes out clean. Remove from the oven and allow to stand for 10 minutes before cutting. Makes 10 servings.
Each serving contains approximately: 315 calories, 5g fat, 41mg cholesterol, 351mg sodium, 54g carbohydrates, 14g protein and 3g fiber.
