A delicious and warming dessert or snack that is as healthy as it is tasty. This Rice Pudding is made much like old-fashioned versions with the biggest change being the use of fat free milk in place of whole.
6 cups water
2 4-inch cinnamon sticks
1 cup rice
3 cups fat free milk
2/3 cup sugar
1/2 teaspoon salt
Raisins, if desired
Put the water and cinnamon sticks into a medium saucepan. Bring to a boil.
Stir in rice. Cook on low heat for 30 minutes until rice is soft and water has evaporated.
Add skim milk, sugar, and salt. Cook for another 15 minutes until it thickens.
If desired, spinkle with or serve with fresh golden raisins.
Recipe makes 5 servings.

Chocolate Rice Pudding
Chocolate Rice Pudding makes a great dessert or snack and we've made it even better by slimming down fat and calories.
2-1/2 cups skim milk
2 cups cooked rice
1/2 cup sugar
1/4 cup semi-sweet chocolate chips
1 teaspoon vanilla extract
In a 3-quart saucepan, combine skim milk, cooked rice, sugar and semisweet chocolate chips. Cook on medium 20 minutes or until pudding is thick and creamy; stir often. Remove from heat and stir in one-teaspoon vanilla extract.
Spoon into serving dishes and chill ten or more minutes.
