1 large peach, pitted and sliced
1 tablespoon butter
1/4 teaspoon ground cinnamon
1 tablespoon packed brown sugar
1/2 cup raspberries
1 teaspoon granulated sugar
1 cup low fat or fat free vanilla ice cream
Saute peach slices in butter until tender and slightly browned, about two minutes.
Stir in cinnamon and brown sugar and saute one minute longer. Set aside.
In separate bowl, stir together raspberries and sugar.
Divide ice cream between two tall glasses. Top each scoop evenly with peaches and raspberries. Top with a cherry, if desired.
Note: If desired, add a dash of Grand Mariner or peach eau de vie to the peaches.
