Artichoke Cheese Dip

Fresh Artichokes for Artichoke Cheese Dip

Artichoke Cheese Dip with light mayonnaise, two cheeses, artichoke hearts, sour cream, garlic and paprika.

Ingredients

1 cup reduced fat mayonnaise
1 cup reduced fat Parmesan cheese
1/2 cup water
2 cups reduced-fat Mozzarella cheese, grated
2 8-ounce cans  artichoke hearts, extra small, drained
1/2 cup light sour cream
1 to 2 teaspoons garlic powder
Paprika

Directions

In a 1-1/2 quart casserole dish, combine all ingredients, except paprika. Mix well. Sprinkle with paprika. Bake at 350-degrees for 25 minute. Serve warm with wheat crackers.

Notes: Can prepare ahead of time, then bake.

Extra: Green Power Dip

1/2 ripe avocado
1 clove garlic
1/2 cup packed baby spinach
1/2 cup packed cilantro
1/3 cup Greek style yogurt
1/4 cup frozen edamame, thawed
1 tablespoon ground flaxseed
1 tablespoon fresh lime juice

Combine in a food processor until smooth. Add salt and pepper to taste. Serve with crackers and vegetables.
