With only 80 calories per serving, this healthy Lutece Vinaigrette contains no cholesterol and is low in sodium.
1 heaping tablespoon finely chopped onion
2 teaspoons Dijon-style mustard
1/4 cup tarragon vinegar
1 teaspoon honey
1 tablespoon water
1 teaspoon fine ground celtic sea salt
1/8 teaspoon freshly ground black pepper
2 drops hot pepper sauce
2 tablespoons extra-virgin olive oil
1/2 cup canola oil
In a small bowl, crush chopped onion to a puree with fork. Add mustard, vinegar, honey, water, salt, pepper, and hot pepper sauce; whisk until ingredients bind.
Gradually whisk in the olive and the canola oil until the ingredients emulsify. Taste and adjust seasonings.
Note: If making vinaigrette in advance, omit onion and chill dressing. Just before serving, add onion and whisk until blended.
Recipe makes 3/4 cup.
