Healthy Dressing Recipe

Ingredients:
One heaping tablespoon finely chopped onion
2 teaspoons Dijon-style mustard
1/4 cup tarragon vinegar
1 teaspoon honey
1 tablespoon water
1 teaspoon fine sea salt
1/8 teaspoon freshly ground black pepper
2 drops hot pepper sauce
2 tablespoons extra-virgin olive oil
1/2 cup canola oil

Directions:
In a small bowl, crush chopped onion to a puree with fork. Add mustard, vinegar, honey, water, salt, pepper, and hot pepper sauce; whisk until ingredients bind.

Gradually whisk in the olive and the canola oil until the ingredients emulsify. Taste and adjust seasonings. Recipe makes about 3/4 cup dressing.

Note: If making vinaigrette in advance, omit onion and chill dressing. Just before serving, add onion and whisk until blended.

Per tablespoon: 80 calories, 1g carbohydrates, .05g protein, 8.5g fat, no cholesterol, and 218mg sodium.
