This Hot Citrus Vinaigrette dressing has just a hint of fire from red hot chili flakes. You should not find it overwhelming - or, if you prefer it hotter, up the ante on the flakes.
5 cups cauliflower florets
2 tablespoons lime juice
1-1/2 teaspoon rice wine vinegar
3/8 teaspoon red hot chili flakes
1/2 teaspoon freshly minced garlic
1/2 teaspoon ground cumin
1-1/2 tablespoons finely minced cilantro
Blanch the cauliflower and plunge into ice-cold water to stop the cooking. Heat the lime juice, vinegar, and chili flakes in a saucepan over medium heat until the flakes have softened. Pour over the cauliflower.
Add the garlic, cumin, and cilantro. Let marinate for at least 1 hour.
