Use fresh or frozen scallops for this tasty Breaded Scallops recipe with a breaded coating seasoned with dried Italian seasoning.
1 pound fresh or frozen scallops
1 cup buttermilk
4 slices whole wheat bread (or approx. 1 cup dried bread crumbs)
1 teaspoon dried Italian seasoning
Salt and pepper to taste
Lightly toast bread and allow to cool. Place bread in a blender or food processor and pulse-blend into bread crumbs Combine bread crumbs, Italian seasoning and salt and pepper to taste in a shallow dish. Rinse scallops with cold water and gently pat dry with paper towels. Place buttermilk in a shallow dish.
Dip scallops in buttermilk then in bread crumbs to coat all sides. Place scallops in a single layer on a baking sheet sprayed with nonstick spray. Bake at 450 degrees for 10 to 15 minutes or until golden brown and firm when pressed and scallops are white.
