Healthy Fruit Salad Recipe

Cabbage, one of the oldest vegetables, continues to be a dietary staple and an inexpensive food. It is easy to grow, tolerates the cold, and keeps well. Cabbage is an excellent source of Vitamin C.

Ingredients:
4 cups shredded cabbage
2 orange, peeled and cut into bite-size pieces
2 red apples, chopped
1 cup seedless red grape halves
1/4 cup currantss
1/2 cup fat-free mayonnaise
1/4 cup skim milk
1 tablespoon lemon juice
1 tablespoon sugar
1/3 cup chopped pecans, toasted

Directions:
In a large bowl, toss cabbage, oranges, apples, grapes and currants. Cover and refrigerate.

In a small bowl, combine the mayonnaise, milk, lemon juice and sugar; cover and refrigerate.

Just before serving, stir dressing and pecans into salad.

Recipe makes eight servings.
