Favorite Fruit Salad is indeed a favorite! Nestled in a honey and citrus orange juice mixture are sweet berries, oranges and honeydew melons. Also contains fresh fruits of strawberries, raspberries and blueberries.
3/4 cup orange juice
1/2 cup light or dark honey
1-1/2 pint fresh strawberries
1-1/2 cup fresh raspberries
1-1/2 cup fresh blueberries
2 oranges, peeled and sectioned
1-1/2 cup honeydew melon balls
1/3-cup fresh mint leaves
Whisk together orange juice and honey.
Add fruit and mint, tossing to coat.
Cover and chill one hour.
Recipe makes 8 servings.
Berries should be fairly firm. Color should be good and not faded. Berries should be refrigerated and should not be allowed to dry out. Use within two to three days after purchase for best flavor and nutritional value. Berries do not ripen once picked. Choose only bright red strawberries and plump firm blueberries that are light to dark blue.
Notes on Honey
As a general rule, light colored honey is mild in flavor, while dark honey is more assertive. Clover, acacia, basswood and orange blossom are some of the lighter varieties; they make wonderful sweeteners for cereal, tea, fruit salads and salad dressings.
In the middle range, you find star thistle, Florida tupelo, sage, alfalfa and honeys from berry blossoms, which add a stronger flavor. Dark honey, such as buckwheat, is used like brown sugar or molasses; it works well on oatmeal and in pancakes and whole grain breads.
