Healthy Fruit Salad Recipe

Ingredients:
1 tablespoon plus 2 teaspoons rice-wine vinegar
1 tablespoon fresh ginger root, peeled and minced
2 teaspoons light soy sauce
1-1/2 teaspoon sugar
1 teaspoon sesame oil
1/4 teaspoon dried hot red pepper flakes
2 tablespoons olive oil
One cucumbers, seeded and sliced thin (about two cups)
4 cups 1-inch cubes of honeydew melon melon
2 scallions, minced
1 tablespoon sesame seeds, lightly toasted and cooled

Directions:
Whisk the first seven ingredients in a large bowl to blend.

Add the cucumber, melon and scallions.

Toss the salad until combined well, and sprinkle with the sesame seeds.

Recipe serves six.
