Fruited Gelatin Salad

Ingredients:
Three cups unsweetened grape juice (white or purple)
One packet gelatin, non-flavored
1-1/2 cup halved seedless black or red grapes
1 cup peeled and seeded tangerine or orange sections
1 cup halved seedless green grapes
Lettuce leaves

Directions:
In a large saucepan, combine grape juice with gelatin; simmer gently, stirring frequently, until gelatin dissolves. Pour mixture into 12-by-9-inch glass baking dish or a comparably sized mold and let partially congeal in refrigerator.

Combine black grapes, tangerine sections and green grapes; mix into partially congealed gelatin. Let chill until completely set (1-1/4-hour).

To serve, cut into six equal portions and use a spatula to transfer slices to individual salad plates lined with lettuce leaves. For a mold, dip bottom of the mold into hot water for a few seconds. Turn out onto a lettuce-lined platter and serve.

Recipe makes six servings.
