The addition of chia adds a high impact boost of nutrients, as well as filling and healthful fiber in Chia Granola Gorp.
4 cups quick cooking oats
1/2 cup oat bran
1/2 cup unsweetened dried coconut
1/4 cup chopped almonds
1-1/2 tablespoon chia seeds
1/4 cup coconut milk
1/4 cup virgin coconut oil
1/3 cup maple syrup
1/4 cup apple juice
Optional: 1/2 teaspoon vanilla extract
Optional: 1/4 cup chopped dried fruit
Preheat oven to 350 degrees.
In a large bowl, combine the dry ingredients until well blended.
In a small pot over medium heat, bring the coconut milk, coconut oil, maple syrup, and apple juice to a boil and cook for two minutes.
Remove from the heat and stir in the vanilla extract, if using. Pour the mixture into the dry ingredients, stirring thoroughly to coat.
Divide the mixture between two baking sheets and bake until granola-gorp is golden and fragrant, about 7 or 8 minutes.
Cool the granola-gorp on the pans. Stir in the dried fruit, if using.
Store the granola-gorp in an airtight container in a cool, dry spot.
