Directions:
Mix brown sugar, 1 tablespoon of sugar, cinnamon, nutmeg, and salt in a bowl and set aside; this is the topping. In a separate bowl, mix 3/4 cup of flour with the egg, vegetable oil, water, salt, and 5 tablespoons of sugar to make a dough. Bring a large pot of water to a boil. Use the extra 1/4 cup of flour to keep the dough from sticking to your hands as you roll it into 1-1/2-inch-long grubs. Drop the grubs into the boiling water one at a time as you are making them. Boil the grubs for about 10 minutes, until they're cooked through (they'll rise to the top of the water) and remove them from the pot.
Next, fry the grubs in enough vegetable oil to cover them. After about 10 minutes, they should begin to brown. When lightly browned, remove them from the oil and sprinkle with the topping. Let them sit for at least an hour, until they're crunchy. Yield: 4 cups.
