Onion Chutney
Keep the calories down in your burgers using this onion chutney. It has a fraction of the usual mayonnaise based spread used on most burgers.
Ingredients:
2 teaspoons olive oil
1 small sweet onion, quartered and sliced widthwise into thin slices
1 jalapeno Chile, cored, seeded and minced
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 tablespoon honey
Grated peel of one lemon
2 tablespoons lemon juice
2 tablespoons chopped fresh mint
Directions:
Heat oil in a medium skillet. Add onion and jalapeno chile to skillet.
Saute over low heat for about ten minutes or until onion is tender but not browned. Add ginger, salt and pepper.
Stir in honey, lemon peel and juice and simmer one to two minutes. Stir in mint. Remove chutney from heat.
Recipe makes about 1-1/2 cups of topping.
