Tomato Chutney Spread Recipe
Healthy Jam, Jelly or Spread Recipe
This is delicious served with a variety of crackers or with cold meats.
Ingredients:
2 pounds tomatoes, skinned
1-1/3 cup raisins
8 ounces onions, chopped
1-1/8 cup sugar
2-1/2 cups cider vinegar
Cut the tomatoes coarsely. Put them in a large 4 1/2 quart pan. Add the raisins, onions, and sugar. Pour over the vinegar. Bring to a boil and let it simmer for 2 hours, uncovered.
Put into sterilized jars. Seal with wax disks and cover with a tightly fitting plastic top. Store in a cool, dark place.
The chutney will keep unopened for up to year. Once open, store in the fridge and use within a week.
