This creamy salmon spread is actually a lighter appetizer, yet it is easy to make and special enough for company.
1 carton (8 oz) fat free cream cheese spread
2 tablespoons grated onion
1 tablespoon lemon juice
2 tablespoons fresh lemon juice
1 teaspoon prepared horseradish
1/2 teaspoon prepared mustard
1 can (14-1/2-ounces) salmon, drained, bones and skin removed
2 tablespoons minced fresh parsley
Crackers or bread
In a bowl, combine the cream cheese, onion, lemon juice, horseradish and mustard. Stir in the salmon. Sprinkle with parsley. Serve with crackers or as a sandwich spread.
For the cream cheese, feel free to use "lite" or even regular if the fat free isn't necessary, or just doesn't appeal to you. The light version does tend to be a bit creamier than the non-fat, which does make for a smoother spread.
Recipe makes 2-cups.

Fresh salmon is high in Omega 3s, but smoking salmon reduces the amount by about 75 percent. In fact, eating pickled or smoked foods several times a week has been linked to an increased risk of developing certain cancers. Recommendation: While an occasional smoked or pickled snack shouldn't harm your health, it's best not to eat them regularly.
