Sparkling Apple Berry Mold

Ingredients:
2 envelopes Unflavored Gelatin
1/3 cup sugar
1/2 cup apple juice
1 bottle (24 oz.) sparkling cider, warmed slightly
1 cup sliced strawberries
1 cup blueberries

Mix gelatin and sugar in small saucepan. Stir in apple juice; let stand 1 minute.

Cook 3 minutes on low heat or until gelatin is completely dissolved. Cool slightly.

Stir in sparkling cider. Refrigerate until mixture is consistency of unbeaten egg whites, stirring often.

Gently stir in fruit.

Pour into 6-cup mold.

Refrigerate at least 4 hours or until firm.

Unmold onto serving plate.
