Lemon Poppy Seed Muffins

Ingredients:
1 egg
1/4 cup butter, melted
1/2 cup milk
2-1/2 tablespoons lemon juice
2 teaspoons grated lemon rind
2 tablespoons poppy seeds
1/2 cup plus 2 tablespoons sugar
1/4 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
1-1/4 cups flour

In medium bowl, beat together egg, melted butter, milk, lemon juice, rind and poppy seeds.

In small bowl, stir together sugar, salt, baking powder, baking soda and flour. Spoon flour mixture onto egg mixture and fold just to incorporate dry ingredients. Do not beat.

Spoon batter into 7 greased muffin tins. Bake at 350 degrees until light golden brown, 22 to 25 minutes. Let muffins sit in pan 5 minutes. Turn out onto wire rack and cool. Makes 7 muffins.
