Vegetarian Banana Muffins with whole wheat pastry flour, bananas, sea salt, applesauce and dates pack in heaps of nutrition.
2 cups whole wheat pastry flour
1/2 teaspoon sea salt
1 tablespoon baking powder
2 large, very ripe bananas
1-1/4 cup applesauce
1/2 cup dates
1/2 cup vegan soymilk
In a large bowl, combine the flour, salt, and baking powder. In a blender, puree the bananas and dates; add the applesauce, and soy milk. Mix well.
Pour the banana mixture into the dry ingredients and stir until just moistened.
Fill muffin cups with the batter and bake at 350 degrees for 30 minutes or until lightly brown and firm.
Recipe makes 6 large muffins.
