Ham and green beans always go well together. Add some Feta cheese to this Green Bean and Ham Pasta Salad with a hint of mint and it becomes sensational.
12 ounces penne pasta
1 pound halved, trimmed fresh green beans
1 package (8 oz) diced ham
1-1/2 cup crumbled, reduced fat feta cheese
1 cup sliced radishes
1/2 cup fresh mint leaves
1/2 cup chopped, roasted peanuts
1/2 cup reduced-fat vinaigrette
Boil penne pasta for five minutes.
Add halved, trimmed fresh green beans. Boil six to seven minutes longer or until pasta and beans are tender. Drain, then drain again under cool running water.
Put into large serving bowl. Add one package (8 ounces) diced ham, crumbled reduced-fat feta cheese, sliced radishes, chopped fresh mint leaves and chopped roasted peanuts.
Add 1/2 cup reduced-fat vinaigrette and toss to mix. Serve.
Recipe makes 8 servings.
