1 16-ounce package macaroni
1/2 cup mayonnaise
1 cup cucumber - peeled, seeded and chopped
1 tablespoon dried minced onion
1 cup diced ham
1 cup shredded Cheddar cheese
3 tablespoons olive oil
3 tablespoons white wine vinegar
Salt and pepper to taste
Mix all ingredients together and refrigerate for about 30 minutes before serving.
Note: For a more hearty salad, add strips of cooked ham, a can of cooked red beans or sprinkle with grated cheese.
Recipe makes 8 servings.
