Pasta, Ham and Vegetable Salad blends pasta with your choice of ham or shrimp, healthy vegetables, Italian dressing and Cheddar cheese.
1-1/2 cup small shell or elbow pasta, uncooked
1-1/4 cup diced cooked ham or shrimp
1 cup halved or quartered cherry tomatoes
1/2 cup sliced green onions
1/2 cup Ranch or creamy Italian salad dressing
1 tablespoon chopped fresh dill or 1/2 teaspoon dried
1/2 teaspoon freshly ground black pepper
6 slices Colby or Cheddar cheese
Lettuce leaves (optional)
Cook pasta according to package directions.
Meanwhile, combine ham, tomatoes and green onions in large bowl. Drain pasta; rinse with cold water and drain again. Add to bowl; toss well.
Combine dressing, dill and pepper; add to bowl and toss well.
Cut cheese in half; cut again into 1/2-inch wide strips. Add to salad and toss again.
Serve immediately or chill until serving time.
Serve on lettuce leaves if desired.
Recipe makes 4 to 6 servings.
