English Muffin Pepperoni Pizzas

English Muffin Pepperoni Pizzas is super simple but super delicious - single pizzas made on English muffins topped with pepperoni.

Ingredients

3/4 cup pizza sauce
6 halved English muffins
1-1/2 cup shredded Mozzarella cheese
3 ounces sliced pepperoni

Directions

Spread the pizza sauce on each muffin half.

Sprinkle cheese over sauce and top with pepperoni slices.

Place prepared muffins on baking sheet. Bake in preheated 425-degree oven for five minutes or until the cheese is melted.

Allow to rest one or two minutes before serving.

Bonus Budget Recipe: English Muffin Veggie Pizza

1 cup cooked chopped broccoli
4 whole (8 halves) English muffins
1 cup pizza sauce (or spaghetti sauce)
1/2 cup Mozzarella cheese, shredded, part skim
3 tablespoons shredded carrots
1 teaspoon grated Parmesan cheese

Cut the broccoli to make 1 cup of chopped broccoli. Put the broccoli in a saucepan with water. Cook on medium until tender. Drain the water from the saucepan. Let the broccoli cool.

English Muffins Cut 4 English muffins in half. Toast the 8 muffin halves. Shred the mozzarella cheese to make 1/2 cup of shredded cheese. Peel and shred the carrots to make 3 tablespoons shredded carrots. Spoon 2 tablespoons pizza sauce over each English muffin half. Sprinkle 1 tablespoon shredded mozzarella cheese on top of each half. Put 2 tablespoons broccoli and 1 teaspoon shredded carrots on top of each half. Sprinkle each half with 1 teaspoon grated parmesan cheese. Toast in the toaster oven for 2 minutes, until the cheese melts.
