King Kong Cookie Pizza Recipe
Healthy Pizza Recipe
Ingredients:
2-1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
Two eggs
One 12-ounce package of chocolate chips, semi-sweet
1 cup chopped nuts (optional)
Directions:
Preheat oven to 375-degrees. In a small bowl, combine flour, baking soda and salt; set aside. In a large mixer bowl, beat butter, sugar, brown sugar and vanilla extract until creamy. Beat in eggs. Gradually add flour mixture. Stir in chocolate morsels and nuts if using. Spread in greased 14 or 15-inch round pizza pan. Bake 20 to 25 minutes. Cool. Cut into wedges.
Recipe makes on 14 or 15-inch round pizza cookie.
Variation: Or, spread batter in greased 15-1/2-inch by 10-1/2-inch jelly-roll pan. Bake 20 to 25 minutes. Cut into 2-inch squares.
Note: You may wish to leave 1/2-inch to 1-inch space between edge of pizza pan and dough before baking so dough does not cook over.
