Healthy Popcorn Recipe

Muffins with whole grain popcorn as an ingredient! While that may sound odd, the tastiness of these should surprise you. These make tender, white muffins.

Ingredients:
1-1/2 cups flour
3/4 cup ground popped corn
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
2 tablespoons melted shortening
1 cup milk
1 egg, well beaten

Directions

Sift flour, measure, and sift with baking powder, salt, and sugar.

Add milk, popped corn, egg, and shortening.

Fill well oiled muffin tins 2/3 full.

Bake in hot oven (425-degrees) 25 minutes.

Recipe makes 6 to 8 Popcorn Muffins, depending on muffin tin size. One serving is one "muffin".
