Mashed Potato Waffles - a cross between a potato pancake and a waffle. Serve the waffle with a dollop of yogurt. It is most important that the batter stands for 20 minutes before cooking.
3/4 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
4 teaspoons butter, melted, cooled
1 cup buttermilk
1 cup plain cooked mashed potatoes
Canola oil, or nonstick cooking spray
1/4 cup plain non-fat yogurt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Sift flour, sugar, baking powder, baking soda, and salt into a large bowl.
Lightly beat egg whites. Beat in cooled margarine and buttermilk. Add egg mixture to flour mixture. Add potatoes.
Heat sprayed or oiled waffle iron. Pour 1/4 of waffle mixture into center of waffle iron. Cook until brown, according to individual manufacturer’s directions.
In small bowl, combine yogurt, cinnamon, and nutmeg for topping.
Place waffles on individual plates and top each with tablespoon of cinnamon yogurt. Serve hot.
