Pierogi are Russian Potato-Cheese Dumplings. They make an excellent appetizer, side dish, or even dessert.
2 cups all-purpose flour
2 egg whites, slightly beaten
1/2 cup water
2 teaspoons butter
1/4 cup green onions, minced
1-1/2 cups plain cooked mashed potatoes, hot
3-1/4 ozs. skim ricotta cheese
1/4 teaspoon nutmeg, grated
Pastry: In a mixing bowl, combine flour, egg whites, and water. Knead until a soft dough is formed. Shape into dough ball, and cover bowl with plastic wrap to keep dough moist.
Potato-Cheese Filling: Melt margarine in nonstick frying pan over medium heat. Saute onions 3 minutes, stirring occasionally. In small separate bowl, mix mashed potatoes with cheese; add mixture to frying pan and stir. Sprinkle with nutmeg and blend all ingredients together.
To assemble dumplings, roll out to 1/4-inch thickness half of dough on lightly floured pastry cloth. Cut out 2-1/2- or 3-inch circles with cookie cutter. Mound 1 teaspoon of filling in center of each cut out; then fold dough in half to form a crescent shape. Squeeze edges together, crimping dough securely. Continue until all dumplings have been prepared.
Bring a large pot of water to boil over medium-high heat. Add 12 dumplings. Cover and cook until dumplings float to surface, 4 to 5 minutes. Using a slotted spoon, remove dumplings to greased tray or plate. Continue until all dumplings have been prepared.
Serve dumplings hot. You may want to serve them with plain nonfat yogurt mixed with snipped chives.
