Delicious Oven French Fries

Delicious Oven French Fries flavored with garlic, onion, pepper, allspice and hot pepper flakes.

Ingredients

4 large potatoes
8 cups ice water
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1 teaspoon white fine grind pepper
1/4 teaspoon allspice
1 teaspoon hot pepper flakes
1 tablespoon vegetable oil

Directions

Scrub potatoes and cut into long 1/2-inch strips. Place potato strips into ice water, cover, and chill for 1 hour or longer. Remove potatoes and dry strips thoroughly.

Place garlic powder, onion powder, salt, white pepper, allspice, and pepper flakes in a plastic bag. Toss potatoes in spice mixture.

Brush potatoes with oil. Place potatoes in nonstick shallow baking pan. Cover with aluminum foil and place in 475 degree oven for 15 minutes. Remove foil and continue baking uncovered for an additional 15 to 20 minutes or until golden brown. Turn fries occasionally to brown on all sides.

Variation: Shoestring Potatoes

Baked Shoestring Potatoes Preparation time: 15 minutes
Cooking time: 30 minutes

Potatoes should have good rich color and have few eyes. They should be firm, smooth and clean. Use a vegetable peeler to peel potatoes. Store potatoes in a dark cool place to keep them from turning green.

1-1/2 pound potatoes
3 tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper

Preheat oven to 450 degrees. Wash potatoes; cut lengthwise into thin strips. Combine remaining ingredients in plastic bag. Put potatoes in bag; seal; shake to coat potatoes. Arrange potatoes in single layer on baking sheet. Bake until crisp and golden, about 30 minutes.
