16 ounces warm vegetarian refried beans
4 9-1/2-inch warm flour tortillas
2 cups warmed chopped sweet potatoes, canned and drained or fresh and boiled
1/2 medium ripe California avocado, thinly sliced
1/2 cup chopped scallions
1 cup finely shredded romaine lettuce
2 tablespoons chopped fresh cilantro
Spread warm refried beans over the surface of each tortilla.
Layer the remaining ingredients over the surface.
Roll up each filled tortilla as tightly as possible.
Serve burrito-style or, for the creative types, gently slice each burrito into four uniform size pieces. Stand pieces up on each plate at 8, 11, 1 and 4 o'clock. At 6 o'clock, ladle your favorite salsa.
