Guilt Free Potato Casserole Recipe
Healthy Potato Recipe
Ingredients:
1 (2-pound) package frozen hash brown potatoes
1 cup whipped low-fat butter, melted
2 cups fat-free sour cream
1/2 cup finely chopped onion
1 (10 3/4-ounce) can low-fat cream of chicken soup
4 ounces low-fat sharp Cheddar cheese, grated (1 cup)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3-3/4 cups cornflakes, crushed (1 cup crumbs)
1 tablespoon butter, melted
Directions:
Preheat oven to 350 degrees. Coat a 2-quart casserole dish with nonstick spray. Combine potatoes, whipped butter, sour cream, onion, soup, cheese, salt and pepper; mix well. Pour into casserole dish.
Combine cornflake crumbs with 1 tablespoon melted butter and spread over potatoes.
Bake for 45 minutes until hot and bubbly.
Recipe makes 8 servings Guilt Free Potato Casserole, about 1 cup each.
