Guilt Free Potato Casserole is thick and rich potato casserole but guilt free with the use of fat free sour cream and cream of chicken soup.
1 2-pound package frozen hash brown potatoes
1 cup whipped butter, melted
2 cups fat-free sour cream
1/2 cup finely chopped onion
1 10-3/4-ounce can low-fat cream of chicken soup
1 cup grated low-fat sharp Cheddar cheese
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3-3/4 cups cornflakes, crushed (1 cup crumbs)
1 tablespoon butter, melted
Preheat oven to 350 degrees.
Coat a 2-quart casserole dish with nonstick spray. Combine potatoes, whipped butter, sour cream, onion, soup, cheese, salt and pepper; mix well. Pour into casserole dish.
Combine cornflake crumbs with 1 tablespoon melted butter and spread over potatoes.
Recipe makes 8 servings.
