White Potato Pie is sweet but still healthy, this is a unique pie recipe that utilizes mashed potatoes. Egg substitute in place of whole eggs really cuts the fat!
2-1/2 pounds potatoes (5 medium), peeled, cooked and mashed with no lumps
2 cups sugar
1/4 cup butter
1/4 cup low-fat buttermilk
1-1/2 teaspoon vanilla or lemon extract
1/2 cup egg substitute
1 cup non-fat milk
4 egg whites
2 frozen regular pie crust shells, thawed and pricked with fork
1/4 teaspoon ground nutmeg
Preheat oven to 400 degrees. In a large bowl, combine mashed potatoes, sugar, butter, buttermilk, vanilla, egg substitute and milk. In a separate bowl, beat egg whites until almost stiff, then fold into potato mixture.
Divide pie filling evenly between the two pie crust shells. Sprinkle with nutmeg. Bake for 45 minutes or until knife inserted in center comes out clean. Makes .
Recipe makes 2 pies, 8 servings each.
