White Potato Pie Recipe
Healthy Potato Recipe
Ingredients:
2-1/2 pounds. potatoes (5 medium), peeled, cooked and mashed with no lumps
2 cups sugar
1/4 cup butter
1/4 cup low-fat buttermilk
1-1/2 teaspoons vanilla or lemon extract
1/2 cup egg substitute
1 cup nonfat milk
4 egg whites
2 frozen regular pie crust shells, thawed and pricked with fork
1/4 teaspoon ground nutmeg
Directions:
Preheat oven to 400 degrees. In a large bowl, combine mashed potatoes, sugar, butter, buttermilk, vanilla, egg substitute and milk. In a separate bowl, beat egg whites until almost stiff, then fold into potato mixture.
Divide pie filling evenly between the two pie crust shells. Sprinkle with nutmeg. Bake for 45 minutes or until knife inserted in center comes out clean. Makes 2 pies, 8 servings each.
