Steamed Sweet Potatoes with just the slightest drizzle of honey on already sweet, sweet potatoes creates a holiday dish that you can serve anytime.
4 sweet potatoes, 5–6 ozs. each, peeled, cut into quarters
2 cups celery, chopped
3 cloves garlic, minced
Olive oil, or nonstick cooking spray
1/2 cup onions, chopped
3 large shallots, chopped
1/2 cup celery, chopped
1/2 teaspoon ground cinnamon
4 teaspoons honey
Peel potatoes and cut into quarters. Bring water to boil over high heat in bottom of steamer. Place potatoes and 2 cups celery in heatproof dish and position on steamer rack. Water should be below rack. Reduce heat to medium-low. Cover pot tightly and continue steaming until potatoes can easily be pierced with tip of knife, 15 to 20 minutes.
Remove cover away from you to avoid hot steam. While potatoes are cooking prepare topping.
Spray a nonstick frying pan; or lightly coat with oil. Saute onions, shallots, and 1/2 cup celery, partially covered, until tender, about 4 minutes. Stir occasionally. Set aside. With slotted spoon, remove potatoes and celery from steamer to deep bowl. Mash vegetables with cinnamon. Stir in sauteed vegetables. Spoon food into serving bowl and drizzle with honey.
