Beer Rice with brown rice and beer plus chicken broth, peanuts and seasonings of salt and pepper.
1 cup brown rice
1 cup beer, allowed to go flat
1-1/4 cup homemade or canned low-sodium chicken broth
1 tablespoon butter
1/4 cup salted peanuts, coarsely chopped
1/2 teaspoon salt
Freshly ground pepper, to taste
Preheat oven to 350 degrees.
Place all ingredients in a 2-1/2-quart casserole dish lightly coated with cooking spray or oil.
Cover and bake until liquid is absorbed, about 1-1/4 hours.
Recipe makes 4 servings.
