Healthy Rice Recipe

Tender, lean cooked roast beef in whole wheat pita rounds with onions, corn, olives, barbecue sauce, lime juice and tasty seasonings. Healthy and delicious!

Ingredients:
One small red onion, sliced into thin rings
1 teaspoon olive oil
3 cups cooked (without butter or salt) brown rice
1/2 cup of whole kernel canned corn
1/2 cup sliced ripe olives (optional)
1/3 cup barbecue sauce
2 tablespoons lime juice
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
Four whole-wheat pita rounds, halved and warmed
1 cup thinly sliced, cooked lean roast beef
Lettuce leaves
One large tomato, seeded and chopped

Directions

Saute onion in oil in a large skillet over medium-high heat until tender. Add rice, corn, olives, barbecue sauce, lime juice, cumin and garlic powder; toss until heated. Line each pita half with lettuce leaf, 1/2 cup hot rice mixture and roast beef; top with tomato.

Recipe makes eight (1/2-pita) servings.
