3 cups cooked brown rice (cooked without butter or salt)
2 cups skim milk
1/2 cup chopped prunes
1 tablespoon butter
1 teaspoon ground cinnamon
Honey or brown sugar
Fresh fruit (optional)
Combine rice, milk, prunes, butter and cinnamon in two to three-quart saucepan.
Bring mixture to a boil; stir. Reduce heat to medium-low, cover and simmer eight to ten minutes or until thickened.
Serve with honey or brown sugar and fresh fruit, if desired.
Recipe makes 6 servings.
