Healthy Rice Recipe

Ingredients:
3 cups hot cooked rice
1/2 cup margarine
1 cup cubed cooked ham
1 cup pineapple chunks 1 cup thinly sliced green pepper
1/2 cup BBQ sauce
Foil

Directions

Combine rice and margarine; toss lightly. Add ham, pineapple, green pepper and BBQ sauce; mix well.

Place individual servings of mixture on squares of foil, bring corners together and twist. Grill or bake at 350 degrees for 20 minutes.

Recipe makes six Rice Packets.

Bonus Recipe: Country Breakfast Cereal

Ingredients:
3 cups cooked (without butter or salt) brown rice
2 cups 1% or skim milk
1/2 cup chopped prunes
1 tablespoon tub, corn oil margarine
1 teaspoon ground cinnamon
Honey or brown sugar (optional)
Fresh fruit (optional)

Directions:
Combine rice, milk, prunes, margarine and cinnamon in two to three-quart saucepan. Bring to a boil; stir. Reduce heat to medium-low, cover and simmer eight to ten minutes or until thickened. Serve with honey or brown sugar and fresh fruit, if desired. Recipe makes six servings.
