1 cup boiled rice (leftover)
1 cup flour
1 cup milk
1 tablespoon shortening
1 teaspoon salt
3 teaspoons baking powder

To prepare griddle cakes, first mix and beat together milk, egg, salt and melted shortening.
Stir in sifted flour and baking powder. Add the rice (cold) and mix well.
Cook on hot greased griddle, turning only once.
Ingredients:
4 cups skim milk (divided)
2 tablespoons maple syrup
Pinch of salt
1 cup uncooked medium-grain brown rice
1-1/2 teaspoons vanilla extract
1 cup raisins
1/3 cup chopped, pitted fresh dates
1 tablespoon grated orange zest
1/2 cup orange juice
Spirals of orange zest, for garnish
Directions:
In a heavy 2-quart saucepan, combine two cups of the milk, the maple syrup, slt and rice. Bring to boil and lower heat to simmer. Cook 25 minutes over medium heat. Preheat oven to 325-degrees.
Mix together vanilla, raisins, dates, orange zest and orange juice. Mix rice mixture with orange juice mixture and pour into lightly oiled 9-by-12-inch baking dish. Bake until mixture has set and is lightly brown. This should take about 90 minutes. Garnish with orange zest cut into spirals. Serve warm or chilled. Recipe makes eight servings.
