Variation: Spiced Rice Pancakes
1-1/2 cup cooked rice
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Pre-heat a non stick skillet over medium-high heat. While the skillet is warming, mix together the rice, egg, vanilla, cinnamon and salt in a bowl until well combined.
Spoon about 1/3 cup of the rice mixture onto a hot skillet. Using your spatula to flatten the ball of rice down until it is a circle and about 1/2 inch thick. Repeat until your skillet is full.
Cook about 5 minutes per side - try not to flip too soon as this can result in loose fried rice instead of rice pancakes. When cooked properly, they should be golden brown on both sides with a solid texture. Top with your preferred toppings.
