Healthy Rice Recipe

A meal in one dish for family or party dining.

Ingredients:
1/2 cup chopped pepper
1 medium tomato, peeled, seeded and diced
1/4 cup finely chopped onion
1 tablespoon olive oil
1/2 cup uncooked long grain rice
1 cup low sodium fat free chicken broth
1/4 teaspoon pepper

Directions

In a saucepan, saute green pepper, tomato and onion in oil until tender.

Add rice; cook and stir for two minutes. Stir in broth; salt if desired and pepper; bring to a boil.

Reduce heat; cover and simmer 25 minutes or until rice is tender.

Recipe makes 2 servings Simple Spanish Rice.
