Healthful goodness! Carrots are nutritional heroes, they store a gold mine of nutrients. No other vegetable or fruit contains as much carotene as carrots, which the body converts to vitamin A. Raisins are low in fat and sodium, but high in carbohydrates for a quick pick- me-up snack. 1/4 cup of dried uncooked raisins provides 1 serving from the fruit group of the Food Guide Pyramid.

Ingredients:
4 medium carrots, shredded
2 teaspoons sugar
1/4 cup of raisins
Juice of 1 lemon

Directions

In a medium bowl, thoroughly mix carrots, raisins, sugar and lemon. Serve chilled. Serves 4
