1 head lettuce (iceberg, green or Boston)
1/2 pound fresh spinach
2 cups cooked fava beans
1/2 English cucumber
1 medium onion
3 celery stalks
Spicy tomato dressing (recipe below)
Wash and trim spinach and lettuce. Tear into bite size pieces.
Drain and rinse beans.
Slice onion, cucumber and celery (or dice). Add to spinach mixture.
Spicy tomato dressing
1/3 cup tomato juice
1 tablespoon salad oil
1 tablespoon fresh lemon juice
1 clove garlic, crushed
1/2 teaspoon paprika
Blend all ingredients together. Makes 1/2 cup.
Pour dressing over salad and serve immediately.
Recipe makes 4 to 6 servings.

Toss together 1-cup shredded raw spinach, 1/2 cup sliced cucumber, six cherry tomatoes (halved), 4 ounces lean cooked sirloin strips, 1-tablespoon red wine vinegar, 2-teaspoons olive oil, 1/4-teaspoon dried oregano and salt and pepper to taste. Serve with breadsticks, if desired.
