2 cups chopped seeded watermelon
1 cup chopped fresh pineapple
1 cup chopped onion
1/4 cup chopped fresh cilantro
1/4 cup orange juice
1 tablespoon chopped jalapeno pepper (optional or use to taste)
In a large bowl, combine ingredients; mix well.
Refrigerate, covered, at least one hour to blend flavors.
Stir before serving.
Recipe makes 8 servings.
Bonus: Aloha Salsa
1 cup finely chopped fresh pineapple
1 cup chopped peeled mango
1 cup coarsely chopped red bell pepper
1 cup cubed peeled kiwifruit (about 3)
3/4 cup chopped red onion
1/3 cup minced fresh cilantro
2 tablespoons lime juice
2 teaspoons chopped seeded jalapeno pepper
Combine all ingredients in a bowl. Cover and chill for 2 hours. Yield: 4 cups (serving size: 1/4 cup).
