Kiwi salsa can be used as a tart topping, garnish entrees and as a salad bar ingredient.
3 to 4 kiwis, peeled and diced (1-1/2 cups)
1 orange, peeled and diced
1 cup jicama, peeled and diced
1/2 cup diced sweet red or yellow bell pepper
1/4 cup cilantro, chopped
1 tablespoon lime juice
1 tablespoon vegetable oil
1/2 small jalapeno pepper, minced, seeds and veins removed
1/4 teaspoon salt
Before you begin, check to be sure your kiwis are ripe. Ripe kiwis feel like ripe peaches.
In a large bowl, combine all of the ingredients, mixing well.
Chill briefly (30 minutes to 1 hour) prior to serving.
Tip: Peel kiwis with a vegetable peeler for less waste.
Recipe makes 3 cups.
If you've yet to try kiwifruit and are hesitant, the flavor of kiwifruit is sweet-tart to acid, somewhat like that of the gooseberry with a suggestion of strawberry.
