2 cups diced pineapple (fresh or canned, drained)
3 tablespoons chopped fresh cilantro
1 tablespoon cider vinegar
1/2 teaspoon crushed cumin seed
1 tablespoon brown sugar
2 teaspoons finely chopped jalapeno pepper (seeded)
Combine all ingredients together gently.
Stir well before serving. Chill 30 minutes to 1 hour, if desired.
Recipe makes 2 cups.
Like most fruits, pineapples are extremely nutritious. Pineapples contain little or no fat or cholesterol, and provide significant amounts of fiber, vitamin C, calcium, and potassium. The digestive enzyme bromelain in the pineapple promotes proper digestion. It may also relieve stomach upset and heartburn.
