Here we offer two delicious sweet orange salsa recipes. The first is made using marmalade. Marmalade is a fruit preserve made from the juice and peel of citrus fruits, boiled with sugar and water. The benchmark citrus fruit for marmalade production in Britain is the "Seville orange" from Spain.
1 cup orange marmalade
1 to 2 tablespoons fresh lime juice
2 cups grape or cherry tomatoes, quartered
1/2 cup chopped cilantro leaves, packed
1 cup chopped peanuts
In a medium bowl, combine salsa ingredients together, stirring gently.
Refrigerate salsa until serving time.
Serving suggestion: Serve salsa with seasoned, grilled salmon steaks.
Recipe makes 6 servings.
Variation: Fresh Orange Salsa
1/2 cup fresh orange segments, diced
1 cup Roma tomatoes, diced
1 tablespoon red onions, small diced
1 teaspoon jalapeno, minced
2 tablespoons cilantro leaves, minced
1/8 teaspoon salt
Combine fresh diced orange segments, tomatoes, red onions, jalapeno, cilantro and salt. Toss gently to mix thoroughly.
Cover and refrigerate until ready to serve. Recipe makes 4 servings Fresh Orange Salsa.
