Healthy Salsa Recipe

Ingredients:
1 cup orange marmalade
1 to 2 tablespoons fresh lime juice
2 cups grape or cherry tomatoes, quartered
1/2 cup chopped cilantro leaves, packed
1 cup chopped peanuts

Directions

In a medium bowl, combine salsa ingredients. Refrigerate salsa until serving time.

Serving suggestion: Serve salsa with seasoned, grilled salmon steaks.

Recipe makes six servings Sweet Orange Salsa.

Bonus: Fresh Orange Salsa

Ingredients:
1/2 cup fresh orange segments, diced
1 cup Roma tomatoes, diced
1 tablespoon red onions, small diced
1 teaspoon jalapeno, minced
2 tablespoons cilantro leaves, minced
1/8 teaspoon salt

Combine fresh diced orange segments, tomatoes, red onions, jalapeno, cilantro and salt. •Toss gently to mix thoroughly.

Cover and refrigerate until ready to serve. Recipe makes 4 servings Fresh Orange Salsa.
