Tomatoes, onions and pepper with seasonings make up this healthy Garden Salsa recipe.
6 medium tomatoes, finely chopped
3/4 cup finely chopped green pepper
1/2 cup finely chopped onion
1/2 cup thinly chopped green onion
6 garlic cloves, minced
2 teaspoons cider vinegar
2 teaspoons lemon juice
2 teaspoons olive oil
1 to 2 teaspoons minced jalapeno pepper*
1 to 2 teaspoons ground cumin
1/2 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
In a large bowl, combine the first 12 ingredients. Cover and refrigerate until serving. Serve with the tortilla chips.
*Note: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.
Recipe makes 5 cups.
