Tomato salsa is so easy, so versatile and so delicious when home made, why buy it?
1-1/2 pound ripe beefsteak tomatoes, seeded and finely diced
1 small red onion, finely chopped
2 garlic cloves, minced
1 bell pepper, any color, chopped
1 jalapeno or chipotle chile and finely chopped (optional)
1/4 cup finely chopped fresh cilantro leaves
1/4 teaspoon cayenne pepper (optional)
1/4 teaspoon kosher salt
1 tablespoon fresh lime juice
3/4 pita bread, lightly toasted, cut into 6 triangles
Combine all the ingredients except for the pita bread, cover and refrigerate for at least 2 hours and up to overnight.
Serve with pita bread triangles.
