A rub is a dry marinade that you sprinkle or pat onto meat before you cook it. Rubs can contain just about anything, and they usually include some salt and sugar. You leave them on for a few minutes before you cook or as long as overnight. As meat cooks, the heat pulls open its pores, and the flavors of the rub seep right in. Rubs help produce bark, a crisp and flavorful crust that also helps hold in meat's moisture.

Sauce Tips

  • Sauce It: Mix plain yogurt with spicy mustard or chili sauce, to taste, for shrimp dip or as a great topping for roasted chicken or fish.
  • If you like a little extra zip to your favorite sauce, add a pinch of dried red pepper flakes while cooking it.
  • If you like your spaghetti sauce a little sweeter, try adding 1-tablespoon of grape jam to your favorite sauce.
  • Make an excellent barbecue sauce by mixing your favorite ketchup with Coca Cola. Brush the mixture on chicken or ribs while grilling.
  • Give store-bought barbecue sauce a Cajun bite by adding a tablespoon of dissolved coffee instant coffee to the sauce.
  • To make lighter gravy, brown flour in a skillet. Cool slightly, then add some instant chicken, beef or vegetable bouillon granules and warm water. Cook and stir until thickened, then add salt and pepper if necessary.
  • To smooth lumpy gravy give it a whirl in the blender. (Release some of the steam that accumulates in the blender container so that the pressure does not force off the lid and spatter hot liquid).
  • Make a Delicious Holiday Sauce -- for pancakes, waffles or ice cream by heating 1 cup 100 percent pure pumpkin, 1 cup maple syrup and 1 teaspoon cinnamon in a saucepan until warm.
  • Bruising soft herbs like basil, mint and cilantro before putting them in a food processor or blender will release flavorful oils and create a better, richer tasting sauce.
  • Use a no-salt tomato sauce in your spaghetti sauce recipe to shave nearly 650 milligrams of sodium per serving. The main dish should still contain enough flavor.
  • Make sauces anytime -- always keep evaporated milk on hand, and you can make sauces at any time without having to worry about keeping perishable half-and-half around.
